The ‘Electric Head,’ Disability & Local Tweetup

I spoke about Chinese cuisine and  the importance of cooking from scratch using butter, palm or coconut oil to ensure your food doesn’t contain MSG or Trans Fats. I followed this up with a Duck Sauce Recipe. I also gave information for mums who want to get their body back after child birth and exercise guild lines for post-natal health and fitness. Here are the ingredients for my restorative Nettle Soup for immunity and recovery, inspired by the amount of people with the usual colds of coughs at this time which I shared with my listeners on Friday’s Drive show:

1 teaspoon of butter, palm or coconut oil for cooking

1 large bag of wild nettle tops

1 finely chopped large sweet potato or 1/2 butternut squash

1 finely chopped onion

1 litre of homemade vegetable stock

150ml fat free natural yogurt or quark cheese (plain Soya yoghurt suitable for those that are lactose intolerant)

Freshly ground nutmeg and black pepper

Fry the finely chopped vegetables in the coconut or palm oil or in real butter for 2-3 minutes. Cover with stock, add the nettle tops and simmer for 15 minutes. Cool, puree and then gently heat adding the nutmeg, pepper and yogurt or cheese.
