Sofia's Recipe
Layered Vegetable Terrine
You will need the following;
350g of Cauliflower florets
350g of Carrots, sliced
350g of Broccoli florets
6 eggs
500g of fromage frais
salt and pepper
1 tbsp of finely chopped Parsley
1 tbsp of finely chopped Basil
1 tbsp of finely chopped Chives
Fresh herbs to garnish (optional)
- Preheat oven. Cook the vegetables in seperate pans of boiling water until barely tender, drain, then rinse under cold water.
- Mix together the eggs, fromage frais and the salt and pepper. Put a third of the mixture in a food processor with carrots and nutmeg. Puree until smooth. Puree the cauliflower with another third of the mixture and puree the broccoli with the remaining mixture.
- Grease a 1.5 litre loaf tin and line the base. Put carrot puree in the bottom, carefully top up with the cauliflower puree and finally the broccoli puree.
- Cover with buttered foil. Put in a roasting tin half full of hot water. Cook in the oven for one hour or until just firm to the touch.
- Carefully turn out the terrine onto a serving dish. To make a sauce mix soured cream with seasoning and herbs. Serve with slices of the terrine.
It's as easy as that. Sofia's aunty is a vegetarian and her handy tip for baking the terrine is to allow it to cook very slowly and gently.
