Freezer tips for christmas. The Food Standards agency has released a list of things to do with your christmas turkey so you’re not stuck with last minute preparations and spend the whole time in the kitchen on christmas day. If you cook in advance and freeze it till you need it, you could save yourself a whole lot of stress.

When your turkey is cooked, let it cool and you can then slice and batch it and store it in the freezer. This allows you to take out only what you need when you need it. Then you can save the remaining turkey for a later date. Just remember that meat previously heated and refrozen should only be reheated once.

To stop cross contamination make sure you store cooked meats separately to raw meats. To prevent the spread of food poisoning germs, don’t wash your raw turkey under the tap, as the splashing water can also splash the germs everywhere. Make sure that you wash everything that’s touched the raw turkey, so you wash away the germs.  Always defrost your raw turkey fully before cooking. If you have an extra large turkey, up to 3kg or over, it can take up to 3 days to defrost. Defrost it in the fridge so  it defrosts slowly and you can be sure that you will cook the inside as well as the outside. You don’t want the middle to still be frozen and pink when you carve!!
